It’s hard to believe the year is closer to the end than the beginning. I noticed a dramatic drop in temperature starting yesterday which was very nice. I can’t wait until winter gets here where the temperatures fall in the low 30 degrees. That is cold enough that if it rains or sprinkles, it will come down as snow.
A friend of mine from Singapore mentioned to me how great the change of seasons are in the United States. I had to agree with him because the weather he lives in is like “summer” all year long there. On top of that, it is muggy which means people are always sweaty and stinky.
Today, my wife made some soy chorizo tacos with avacados, cabbage, and salsa, and whole wheat tortillas. Wow. I am amazed at how all good this food tastes. We will have this meal many more times that is for sure. The great thing about our recent change in regards to the roster of our foods is now everything in the cupboards and refrigerator is 100% vegan. I think that makes it easier to eat healthy at all times and eliminates any cravings to go back to the olds ways. Honestly, I haven’t had any cravings at all of any of the previous foods we ate.
On top of that, with the recent salmonella outbreaks in eggs and beef again, it reinforces our decision to avoid all animal products. I hate the fact more people don’t realize that this is a sign to change. I think it is silly for people to think they can not change for the sake of their own health because they would miss the taste of meat. To me it is the same logic that smokers use to justify smoking. They know it is bad for them but enjoy inhaling the smoke too much to quit. In the collections field, I would say more than 60% of the collectors smoke and they do so for the purpose of calming their nerves.
